Mom’s Best Beef Stew
1 ½ lb. beef (cut into small cubes) 1 tsp. sea salt or Lite salt Dash of fresh ground pepper ½ tsp. sugar Sprinkle beef with salt, pepper and sugar. Brown well in dutch oven in 2 tablespoons fat.
4 cups water 4 beef bouillon cubes Mix and add to beef. Cover and simmer one hour or until almost tender.
6 tablespoons Heinz 57 steak sauce 1/3 cup sliced celery 4 med. Potatoes cut in eighths 4 med. Onions quartered 5 to 6 large carrots cut in one inch pieces
Add steak sauce and veggies and simmer one hour or until vegetables are done. Thicken with a flour and water mixture.

Favorite Round Steak
Pound small pieces of partially thawed round steak on both sides with a meat pounder.
Roll in whole wheat flour and quickly brown in olive oil.
Place steaks in baking pan or dish.
Mix 1 can cream of chicken soup and 1 can cream of mushroom soup with 1/2 can milk or water. Pour over steak.
Bake covered in slow oven 300-325 degrees for about 2 hours or till tender.

Tips For Cooking Grass Fed Beef
Your biggest culprit for grass fed beef is overcooking. This beef is made for rare to medium rare cooking. If you like well done beef, then cook your grass fed beef at very low temperatures in a sauce to add moisture, such as in a crock pot or slow oven. Since grass fed beef is lower in fat, coat with virgin olive oil, truffle oil or a favorite light oil for flavor enhancement and easy browning. The oil will also prevent drying and sticking. Marinate your beef before cooking, especially lean cuts like NY Strip and Sirloin Steak. Choose a recipe that doesn't mask the delicate flavor of grass fed beef but enhances the moisture content. Some favorite marinades are lemon, vinegar, and wine. Some people use their favorite Italian salad dressing. If you choose to use vinegar or wine, use slightly less than you would use for grain fed beef. Grass fed beef cooks quicker so they won't have as much time to cook off. For safe handling always marinate in the refrigerator. Grass fed beef has high protein and lower fat levels so the beef will usually require 30% less cooking time and will continue to cook when removed from heat. For this reason, remove the beef from your heat source 10 degrees before it reaches the desired temperature. When grilling, sear the meat quickly over a high heat on each side to seal in its natural juices and then reduce the heat to medium or low to finish the cooking process. Also, baste to add moisture throughout the grilling process. Don't forget grass fed beef requires 30% less cooking time so watch your thermometer and don't leave your steaks unattended. When roasting, sear the beef first to lock in the juices and then place in a pre-heated oven. |
